Chicken Cottage Pie with Sweet Potato Topping



  • 120g chicken breast mince
  • ½ cup sweet potato
  • ¼ onion
  • ½ garlic clove
  • ½ cup chicken stock
  • Handful of capsicum
  • Handful of green beans
  • Salt and pepper to taste
  • Handful of grated cheese
  • Tsp olive oil


  1. Pan fry onions, garlic, capsicum and green beans for a few minutes then add in the chicken mince and stir until cooked.
  2. Add in chicken stock and leave to simmer slowly for 15 minutes.
  3. Boil sweet potato and mash.
  4. Pour chicken mixture into an oven proof bowl spread sweet potato mash over the top and sprinkle with grated cheese. Pop into a hot oven for 5 minutes until top is brown.
